Job Description
- Manages all day-to-day operations of the pastry and bakery section of the production.
- Ensures that each Commis, Chef de Partie, Pastry Sous Chef and Pastry Chef understands his/her duty including the training on recipes, preparation and presentation of pastry products.
- Ensures that all the order requests are executed in a timely manner.
- Able to develop, designs, or creates new ideas and items for production.
- Supervises that waste control.
- Ensures to keep all equipment clean, orderly and well maintained; used as per manufacturer manual and with possible defects reported.
- Assists the training of concerning food handling, storage, and proper cleaning and personal hygiene.
- Attends all scheduled employee meetings and brings suggestions for improvement.
- Must possess a positive attitude and have the ability to work with a variety of people and in cooperation with co-workers efficiently and effectively.
- Checks the quality of raw and cooked food products to ensure that standards are met.
- Assists in determining the food presentation and creates decorative food displays.
- Monitor stocks for baking ingredients such as flour, sugar etc. and make appropriate orders within budget.
- Encourages and builds mutual trust, respect, and cooperation among team members.
- Serves as a role model to demonstrate appropriate behaviors.
- Strong ability in managing production team with large headcount
- Provide an effective production planning and control.
- Ensure cost-efficient of production process, promote timely delivery of goods and improve customer satisfaction.
- Minimize production time and coordinate with other departments to ensure the goals are achieved.
Requirements
- Minimum of 10 years of experience in pastry cooking or Pastry Chef Experience with high volume food production.
- Expert in food and beverage, pastry and baking.
- Expert knowledge of safety and hygiene regulations and procedures.
- Proof of continuing education translated in certificates or letter of participation in specialized courses.
- Ability to train and motivate subordinates.
- Ability to innovate and foster creativity.
- Ability to organize and complete work in accordance to deadlines.
- Positive attitude and excellent communication skills.
- Excellent leadership skills.
